Multi-Device Household

Whats the best format (I'm guessing "universal") for encoding for a wide variety of devices? 

I'm trying to push/maximize the DLNA capabilities in my devices and make my movie library available on as many options as possible for streaming distribution in the house.

I've got a WHS2011 media server storing the files, running Serviio for DLNA serving to a DLNA Samsung TV, DLNA Onkyo receiver, Win 7 laptop, MacBookPro, OPPO-103 bluray player, Win7 Pro HTPC connected to 1080p plasma, Win7 Pro HTPC connected to 720 LCD, Android tablet, iPad, Android phone (Razr Maxx) and iPhone. 

Whats the best setting to make sure the files will play across all those devices and keep my "tech support" time to a minimum?

"Universal" would indeed be a good start here. You could probably tweak it and get slightly better settings but it's a safe choice.
